Περίληψη – Summary

Η ποιότητα της διατροφής σχετίζεται σημαντικά με την πιθανότητα εκδήλωσης νόσων καθ’ όλη τη διάρκεια της ανθρώπινης ζωής. Τα τελευταία χρόνια αναζητείται και η συσχέτιση της διατροφής των παιδιών στην εκδήλωση ατοπίας, με τη μορφή άσθματος, εκζέματος, τροφικής αλλεργίας και αλλεργικής ρινίτιδας. Η εκδήλωση της ατοπίας σε παιδιά επηρεάζεται τόσο από τη διατροφή της εγκύου και τη περιεκτικότητα των τροφών που προσλαμβάνει σε αντιοξειδωτικές ουσίες και λιπαρά οξέα, όσο και από τη διατροφή του παιδιού στη βρεφική και παιδική ηλικία. Είναι υπό μελέτη αν στην εκδήλωση αλλεργικών αντιδράσεων μπορεί να οδηγήσει η παχυσαρκία και η κατανάλωση προπαρασκευασμένων τροφών που περιέχουν συντηρητικά και χρωστικές ουσίες, όπως η ταρτραζίνη, το γλουταμινικό μονονάτριο, το βενζοϊκό νάτριο και κάλιο. Η διατροφή, όμως, μπορεί να αποτελέσει και την ασπίδα στην εκδήλωση αλλεργικών αντιδράσεων, επειδή η υιοθέτηση της Μεσογειακής δίαιτας φαίνεται πως ελαττώνει σημαντικά την αλλεργία στην παιδική ηλικία. Σκοπός της εργασίας είναι η διερεύνηση της επίδρασης ορισμένων τροφών στο ανοσοποιητικό σύστημα, με συνέπεια την πρόκληση αλλεργικών αντιδράσεων στα παιδιά.

The quality of diet is considerably related to the possibility of illnesses occurring during a person’s life. Studies in the past few years have searched for cross-correlation of children’s diet with the event of atopy, in forms of asthma, eczema, food allergy and allergic rhinitis. The occurrence of atopy is related to mother’s diet during pregnancy and the food content in antioxidants and fatty acids as well as to the child’s diet during infancy and childhood. It is studied if childhood obesity could lead to allergic reactions and so is the consumption of prepared food containing additives and conservatives such as tartrazine, glutamic monosodium and sulfating agents. Diet can also be protective against allergic reactions, because the adherence to a traditional Mediterranean diet seems to contribute to a decrease of allergy during childhood. The aim of this essay is the presentation of the influence of some foods on the immune system resulting in allergic reactions in children.
